I have created a pretty basic survey to get the satisfaction levels of participants in our recreation programs.
In this survey, we collect the home ZIP code of the participant so we can get a rough idea how far folks travel to attend their recreation program. The ZIP code question is a Singleline Text with an input mask for ZIP codes (99999).
I am wanting to create a dashboard that has a map displaying which zip codes have the most participants coming from them. However, whenever I try to map this in ArcGIS Online, I can only map where the survey was submitted from.
How can I map out the ZIP codes entered from this survey into something useful?

You're talking about performing a join, basically. Get a ZIP Code polygon layer (I think the Living Atlas has one), then use the "ZIP" column to join the two together.

Your survey responses will then be aggregated and added to the zip code areas as new attributes, which you can then use for symbology options.
