Is it possible to edit a table in a web map on ArcGIS Online? I see the "Enable/Disable Editing" option on the table, but I can't add a row or edit any values in the web map. If I go under "Edit", it only has options for the feature classes. This is a table from a feature service on ArcGIS Server, not hosted.

Not yet. I would suggest 'up-voting' on the Ideas Site. This Ideas Site is referenced by development as they look to add functionality, so it would be the best place to try to drive this as a need.

According to this blog (geoXchange - geoXchange - The Wonderful World of Tables in ArcGIS Online ), the Field Calculate tool was added in October of 2014, but there's no mention of editing individual fields or adding a new row. There's also a post on the Ideas site about editing individual values (https://esri.secure.force.com/ideaView?id=087E00000005IOe&returnUrl=%2Fapex%2FideaList%3Fc%3D09a3000... ).
