Would it be possible for edits coming in via Sync to be updated by attribute instead of by row for ArcGIS Online hosted feature services?
We have issues with field users taking Collector offline in the morning (and updating certain fields) overwriting bulk updates (on different fields) done in the office when they sync at night. Examples of the issue are provided in the GISS Workflow here as watch-out situations.
Having a mechanism to allow for multiple offline editors to touch the same feature without guaranteed data loss would be a major improvement for us.
If you set up your services such that they are published from a versioned dataset (enterprise geodatabase) and you publish by reference instead of a hosted service, this is already supported.

With this workflow you can perform reconciles after edits have been synced and choose how you want to define conflicts.
I am not sure if this would be helpful for your needs. Or perhaps your request is more specific to working with Hosted data?
Hi @WalkerHenry__NIFCAdmin I'm doing some housekeeping here in the ArcGIS Pro idea exchange and saw this marked as Needs Clarification. Russell provided some information above and asked if you are looking for this to work with hosted data (e.g. hosted feature services in ArcGIS Online).

Training and communication has lessened the impact of this, but a mechanism to allow for multiple offline editors to touch the same feature without guaranteed data loss would still be a major improvement for us.

There was a bit of deliberation internally about this and the problem arises because while the main idea appears to be about sync, you then mentioned versioned data. We really want to get this idea opened back up, but to do, we're proposing that we update the title to:
Update only edited fields when syncing hosted feature service.
And the idea's description to:
