With the June 2021 ArcGIS Online update, ArcGIS Image for ArcGIS Online released into general availability. This capability incorporates a number of imagery ideas.
With ArcGIS Image for ArcGIS Online enabled, the option to create an imagery layer is available from the New Item menu:
Then, you can easily upload your source rasters and publish the layer:
When consuming the imagery layer in Map Viewer Classic you'll have access to a full suite of raster analysis tools and a raster function editor to chain the tools together as a raster function template. For tiled and dynamic imagery layers, you can use the raster function templates for analysis. Dynamic imagery layers also support displaying imagery using a raster function template:
