Setting up a map for Trimble DA2 Catalyst survey in different coordinate system

I cannot figure this out...

I purchased a Trimble DA2 Catalyst and I'm planning to survey with this equipment using Field Maps. I understand how ArcGIS Online maps are using the basemap to set the spatial reference, but I cannot figure out how to get an online map into my choosen spatial reference.

I want to survey in NAD 1983 (CSRS) v7. It doesn't seem like there is a transformation from this to WGS1984 when I try to setup my profile in Field Maps. I believe I understand that the best scenario is to not even need to do a transformation. So with that, I want to create an ArcGIS Online map that is using NAD 1983 (CSRS) v7 as the spatial reference. I am at my whits end, so please be very specific in your instructions, I'm far from an expert ESRI user. Thank you so much in advance.

I did read that first post, but I had thought getting my online map into NAD83 (CSRS) v7 would be even better (i.e. GNSS, layer, and map all on the same spatial reference). If it's not possible, then I will follow the directions in that first post. Are the coodinates (lat long) that get captured in the GPS metadata always accurate and can be shifted into any spatial reference (i.e. not transformed)? Is that one of the reasons that capturing the GPS metadata is important, because the data is unadulterated? Sorry if I'm understanding it wrong.

I guess the next question is...what do I use in the Field Maps profile to transform from NAD83 (CSRS) v7 to WGS1984 web mercator? When I zoom into the area of my work, there are no transformations that come up. There is one if I zoom out far enough to see Alberta, but is the appropriate? Or should I setup the DA2 in WGS84 so that everything is on the same spatial reference? Then can I simply transform it one time to my preferred spatial reference after everything is done?

do you have option to test similar with ArcGIS Pro for comparisons?

Yes I do have ArcGIS Pro. I'm much more familiar working in ArcGIS Pro than I am in ArcGIS Online.

Okay. I'm now completely satisfied that I have everything right and I'm off to the races! It took a fair bit of wrapping my head around exactly what the Trimble DA2 is providing, and how to turn that into the data I need, but we made it. Thanks for all your help @BillFox.
