I've noticed that if you group layers within your web map, when you open the layers list in Field Maps the groups also have to be turned on/off (rather then just expanded). (how this works doesn't see intuitive see separate post Display of the layers list within Field Maps - Esri Community)
Turning off a group though seems to hide all the sub layers in that group from the map (as I'd expect) (irrespective of whether the individual layers are turned off or not). However if you untick this group layer and then go to add data to the map these sub layers are still shown in the layers available in the 'Collect' panel of layers (if they were not individually turned off). This feels wrong, as if you've turned these layers off via the group and can't see them on the map, then you shouldn't be able to still collect data against them.
I actually just came to Community to ask part of what you've asked (and likely still will but will cross post here). I've just been experimenting with grouped layers with exclusive visibility, but it seems that regardless of if the group is turned off, if the sublayers are turned on then they still appear in the list of feature types that can be created. At first I assumed it was a recent change (bug) that affected all layers, then after reading your post, I checked and can confirm that the visibility of layers not within a group are still honoured in whether they appear in the Collect features list or not. Likewise, if a sub-layer is turned off (regardless of whatever the group is doing) then it too disappears from the Collect features list (as it should).
In summary - it seems that the group layer visibility is not flowing through to the Collect feaures list. I've decided to lodge this one with Esri Support as a BUG and hope it gets a fix soon.
