We want a “Follow Me” feature in the map that ensures the user’s GPS position is continuously tracked, even when not in editing mode. The functionality should behave similarly to navigation in Google Maps while driving, where the map automatically adjusts based on the user’s real-time movement.

Have you tried using the location tool in the map (the button in the top-right corner of the map view)? It has three modes (see the details in part 8 of the help section available here):
It sounds like the third mode (tapping on the tool twice) will give you the behavior that you're looking for. If that isn't working how you'd like, can you elaborate on what is missing from it?
I suspect that the problem with the existing functionality is that it behaves slightly differently to most apps with auto location tracking/follow me functions. When in Google Maps or Ozi Explorer for example, the screen moves constantly tracking the users location. In Field Maps though, the screen moves in "steps" for lack of a better term. The user will always be visible in the centre third (approx) of the screen, then the screen will slide to recentre the user as they move towards the edge of the view. You get this constantly move-pause-move-pause effect on the screen as the user travels across the map. I've always found this annoying and suspect it's what the OP is either wishing behaved like most apps, or has mistaken it for not actually being location tracking.
