Style an editable hosted layer by two attributes

Hello,
I am attempting to style an editable hosted layer on our ArcGIS enterprise (10.8). I would like to style the symbology from two attributes. I choose the first attribute with no problem, then when I click "Add attribute", there are no attributes listed in the drop down, only "New expression". So I did do the expression in arcade, and that worked out, however now the editing templates do not understand the symbology expression.
The fields were text fields at first, then I changed one of them to a double, and still no attributes in the second drop down.
Any idea why the second attributes are not showing in the drop down?
