Is it possible to have the Maximum Values update on the gauges to reflect numbers for a specific project when that project is being selected using the category selector? The values related to that field do update, but I would like to have the max value update along with it. Any help would be greatly appreciated!

If you set the maximum field to a statistic in your data, you will be able to select it from the actions tab from the category selector.
