Predefined Date Selector options for "last night"

I have a requirement for a "Last Night" option in the Date Selector so that users can select data created through a typical night shift. The data collection spans two calendar days.

If Now is 7th January, then I'd want all data between 8pm on 6th Jan and 5am on 7th Jan.

If I use the date picker, then the user can manually enter both the date and time to obtain the correct results.

Ideally I'd like to build a "Last Night" option in the Defined options list but while I can specify a nominated date and time, I cannot configure this to be "from 9pm yesterday to 5am today"

Dashboard is Enterprise 11.2 and the data is a hosted fs on enterprise 10.9. The date fields that I am querying have the full date/time. Hoping that this is possible in some way as the shift supervisor would love to hit a "Last night" option with his morning coffee.

Bumping this topic again as I'm yet to work out a viable solution. My Plan B is to add an extra field to the data capture that specifies an "Operation number", and the users can directly query on that, but it's a significant workaround given the data is collected in Field Maps and we don't have project fields like Quick Capture. Thus it'd be an extra field for users to enter for every record.
