Force selection on Category selector element - delete available choices from list

The field I am using in the Category selector element has 8 records. However, I want to only have one choice for the user to select. Basically "force that selection". Is that possible? I have tried to go in and use the trash can icon to delete the choices I do not want available. I only want Transportation to display. Using the trash can icon didn't permanently remove them.

Try using defined values and only add Transportation.
