I have created Arcade expressions that display pop-up data from a related table using FeatureSets. They work in ArcGIS Online but not in Collector. Does Collector (the new iOS version) support FeatureSets?

I have a hosted feature layer in ArcGIS Online that data is collected using QuickCapture and Collector. I have Map Areas created for Collector for offline use. That kind of makes sense since when you go offline it creates a check out replica on the device. Whenever you create a new dataset Arc starts objectid back at 0. ObjectIds can change for all kinds of reasons. I suggest not using that as your ID. Hope that helps.

I have 9 to 13 related Feature classes to one main feature class and it works fine. I use my own IDs though and not globalid. I do not use globalids for keys for all the reasons in this post Related Tables for Offline Data Collection Hope that helps
I would like to collect signatures from customers in the field using mobile devices (iphone, ipad) and Collector. Is there a way to collect a signature as an attachment or edit an attachment to include a signature?

Agreed use Relationship classes. Reference point is the main feature with each inspection related to it. I do this using Survey123 See this post Mapping with Survey123 within a polygon or admin unit Hope it helps.

If you turn on editor tracking in Pro and then publish it will create and use created_user. But if you publish from Pro then turn on Editor tracking in AGOL you get Creator.
