You don't have to do anything. The interpolation tools in Spatial Analyst and Geostatistical Analyst automatically ignore Null values 🙂 -Steve

Have you tried CellStatistics and with regards the RasterCalculator issue, do all the rasters have the same spatial reference, cell size and origin? and, for example, (256+256+200)/3 = 237 which means that the output could have a value less than 256. Maybe I'm not understanding what you are saying.

Those are not really prediction values. In cross validation - Removes one data location and predicts the associated data using the data at the rest of the locations. The primary use for this tool is to compare the predicted value to the observed value in order to obtain useful information about some of your model parameters. To get those values you need to run the Cross Validation tool.

Maybe you misunderstood me. To get the same prediction values as in the Wizard use the GA Layer To Points tool and leave the "Field to validate on" blank (i.e empty).

As Dan Patterson mentions -> there are other interpolation methods. I would suggest that you look at Spline with Barriers (Spatial Analyst/3D) and Kernel Interpolation with Barriers (Geostatistical Analyst). Also, as jayanta.poddar mentions, display the value at the points and take a screenshot only showing the interpolated area.
