Adam You do get a raster when you use the defaults? File geodatabase rasters cannot hold a value if the output has only 1 column and row. I guess that you are specifying a cell size that'll produce a single cell output. Try changing the output to a file based raster, for example, c:\temp\mytif.tif and then look at the properties, right click on the raster layer in the table of contents -> Properties -> Source -> Raster Information. ...
