I am adding my road centerlines to the Local Gov Information Model and Im running into an issue concerning field types. My county road numbers have N's and W's in front of them (i.e. N4598 Bastian Rd), but the road number fields are Long type. Can I delete those fields and add new fields with the same name but are string instead of long, without messing up something else?

You can add a new field, use the old field to calculate new values into the new field using the field calculator.
Is there anything wrong with leaving the old field in the table (you may hide it if you like)?  If interested in 'reusing' the old fieldname, you can also calculate the old field to a new field of a different name.

To speed things along there is a new X-Ray tool called "Replace Field..." that will do the several steps for you. There is also a "Re-order fields" tool if you are picky about field order.
