Create polygons from RGB pixel values?

Hello,

I am analyzing a parcel of farmland that contains a house, some road paving, a large barn, and of course the majority being a cultivated field. The analysis is being done using multispectral imagery, so there are RGB pixel values. What I am looking for is a way to train Arc to create polygon features of each class of land use feature (house, pavement, barn, field crops). Is there some function or method to tell ArcMap to look at a space, then create feature classes from RGB pixel values?

If you have spatial analyst, have a look at the classification toolbox.

To do what you need to do, probably create training areas and use a clustering algorithm.
