00256: Server version <value> tool <value> does not have new parameter

Hi 

We have recently upgraded from ArcGIS enterprise 10.7.1 to 10.8.1.  One of our geoprocessing tools no longer runs and I get this message when I try to republish it:

00256: Server version 10.8.1 tool ZonalStatisticsAsTable_sa does not have new parameter percentile_interpolation_type

The original service was published using ARcMap 10.7.1. I have attempted to republish the service using ArcMap 10.8.1 and ArcPro 2.7. to no avail. 

Does anyone have any suggestions of how to get round this?
