What happens if you run the Check Geometry tool (and Fix Geometry on a copy of the data) on the data? If a polygon won't properly "fill" with color, it usually means that the polygon is not properly closed.

Were you able to fix this issue? I am having the same with all my shapefiles/feature classes. Were you using MapLogic when this happened?

I think that's a consequence of screen drawing without anti-aliasing.

How does it look when you print it or export it?

The exports are pixelated as well unless I crank up the resolution. I've never had any problems around 300dpi but now it requires at least 500 to appear smooth.

I admit I don't know a lot about export.
Is there any transparency or picture-based symbology or anything like that in your map? What file format are you exporting to? Have you tried other formats?
