Exporting layout to EPS and view line and polygon vertices in Illustrator

Hello,
Using ArcGIS Pro 2.7. I am trying to export some simple polygon outlines of items in a layout into EPS but I need to retain the vertices and vector information when the EPS is opened in illustrator. When I export and open in Illustrator the map has been broken into images that are blocks over a rasterized image of the polygon (see image). How do I retain the vector information in the EPS?
