Whenever I add XY data from a .CSV file the latitude category disappears when I reopen the .CSV file after uploading more data.
Is there a reason why my latitude category disappears when I try to update my coordinates?
The latitude coordinates are present in the .CSV but the option to choose those latitude coordinates is gone.

Darren may be on to something with the potential space in the field name before the Lat and Long fields. As a test you could try several things
Check the column... the columns won't be an option if it is represented as text...it may look like a number but it may be formatted as text, and/or the column contains text or blanks
Dan is right, the latitude and the longitude must be formated as number, then you can easly import the csv file in arccatalog or arcmap to trasform the point text in a point feature, and add the z value if is present as formatted a number. If lat and long are not present you wont able to rappresent x, y and z data in arcmap
I changed both latitude and longitude columns to number format from general format.
After converting the option to select latitude was still missing.
I addition the file does not save the changes from general format to number format.

I assume you are creating this file in something like a spreadsheet, hence if the format can't be changed from general to number there is something in the columns (like spaces) or in the cells that prohibits (like saving degrees minutes and seconds in a column)...but this is conjecture until you copy and paste some of the rows in your initial question to show what you are working with.

Here is an example of the formatting of our rows with false addresses. We found and replaced some of the spacing issues in the columns however the problem of the latitude category disappearing still persists when we attempt to re add the xy data from the file.
Probably not the issue, but your column "Trap Series" has a space in it, which may throw a monkey wrench in the gears.
