How to keep mxd customization upon ArcMap upgrade

I am upgrading ArcMap from 10.2 to 10.4 and want to keep my toolbars and customizations, etc.

You could test the following.

Keep a backup of C:\Users\<UserName>\AppData\Roaming\ESRI\Desktop10.2.

Replacing the Normal.mxt template after the new install might work.

I would copy the current Normal.mxt at the path, below; then after updating ArcMap, I could replace the Normal.mxt that came with the update with the saved one.?

Yes. You can replace the Normal.mxt
I would suggest you to keep a backup of C:\Users\<UserName>\AppData\Roaming\ESRI\Desktop10.2. You might need the connections of ArcCatalog as well.
