Extract published data

Hi,

I need to port some published dataset on an arcgis server service for analysis on a arcgis desktop machine.

1. is it possible to extract data layer (.shp or .mdb) from an arcgis published service.

2. are there tools to extract and convert to .shp or .mdb

Any help is appreciated.
