Just so I understand you correctly, you have an Excel table that you have successfully added into ArcMap and created an XY Event Layer from? However now you have edited the coordinate values and the points no longer appear?
A couple things you can check.
First, see if the Excel table in ArcMap has any features in it (simply open the Attribute Table). If no records exist then perhaps your data is corrupted or simply needs to be removed from the map and added back in.
Second, make sure you entered valid coordinates in your table. Perhaps you entered the coordinates in backwards (happens to the best of us).
Third, simply try to recreate an XY Event Layer. You should be able to create the event layer, edit the Excel table, and see the changes in your event layer by refreshing the map document.
