Clipping raster causes colour shift

Hi folks, sorry if this is a totally stupid question, but I'm still a pretty green ArcGIS user. I'm trying to clip sections of a basic RGB jpeg raster using irregularly shaped polygons using the raster>Raster Processing>Clip functions. I've done everything I could find on the forums and have managed to get a jpeg output that's the right shape, but the process is drastically altering the spectral characteristics of the output image compared to the original. In all cases, the hue, saturation, vibrance, exposure, and contrast are affected, but unfortunately they're not consistently affected (ie, I clip two polygons right next to each other and one darkens and turns orange, the one next to it gets blown out so badly I can't use it).

Any ideas on how to make my clipped image subsets identical to the parent image?

Can you provide me with a sample data and I will try to regenerate the issue?
