Pretty self explanatory - i'm trying to enable some query functions in a webapp, but have no idea what widget i can use to just let my users build queries....

Are you talking about letting the user build the query SQL statement at runtime? If not then just use the Query Widget in WAB
when i use the query widget, it seems to ask me to pre-configure canned queries. if i leave it blank, it just queries the entire dataset

That is correct. There is not an out of the box query widget that allows the user to define queries at runtime. There is this Enhanced Query
