I feel compelled to post about this again despite the fact that it's been asked about multiple times. Instead of fixing the default behavior, ESRI forces its users to find workarounds. When exporting a .csv file from survey123.arcgis.com, the default behavior should be to export the field names, not the labels. Labels are often long and may contain complex characters which are not designed for analysis. Please fix this problem ESRI. Or you could just coast on the fact that you control the vast market share for GIS software and do nothing about it. I won't hold my breath.
By the way. I tried a workaround in which I opened the Survey123 feature layer in ArcGIS Pro and then exported the attribute tables as .csv. This resulted in dropping the global ids, which are critical for linking dependent tables. Another bizarre default behavior that should be fixed.
