Currently the date appearance in Survey123 is tied to the date format in the device settings, on a Samsung Android phone this is in the format: Day of Week, Month DD, YYYY (Wednesday, May 16, 2018) unfortunately there is not enough screen real estate on most smartphones to accommodate a string this long. It would be great to be able control the date format from the Appearance field and add the ability to have a shortened date display (e.g. mm/dd/yy) on smaller screens. There are probably a few other permutations of a date format that would meet others needs as well.

Yes, I would like the ability to change the format to dd/mm/yyyy when editing the survey.
Not only is the date section unconfigurable, the time section also needs to be configurable. In my Survey123 form (tied to a feature service) the datetime type allows the date section to take up too much of the line, so the time is cut off. The AM/PM is overlooked, and thus not updated correctly during entry. After all, we humans are lazy by nature!
Even the ability to use standard Esri nomenclature for datetimes in the appearance box, so we can set it to the correct format, rather than the American one
