Reef elevation map

Hello I am trying to create an elevation map for a reef to show how the elevation has changed in the past few months. What would be the best approach to this?

do you have elevation of the seabed data or depth to the bottom data? that omission would help to guide suggestions

Yes, I have the depth of the reef I am trying to map.

What form are the data in?  point, polyline raster?

What arcmap extensions do you have available to you? (ie spatial analyst and/or 3D analyst and/or geostatistical analyst)

Are the data for a contiguous space over time? 

What resolution are the data both spatially and temporally?

Do you have an image of what you have?

Anything you can think of?

Of course, software platform and version would help since this site deals with all kinds of software and numerous releases.
