Problems using hilllshade - what feature/s use to achieve desired picture?

Have downloaded the appropriate elevation map, performed the first basic hillshade, downloaded an extension 'color ramp 3.0' pack for the style manager, and overlayed the coordinates of the catchment boundary I am trying to map. However, am attempting to achieve a map that looks visually better than a similar map, but struggling to separate the colour boundaries that show any change in elevation - PLEASE HELP!! (Reverted back to the original black to white color ramp as shown in ATTACHED FILE OF BOTH MAPS - 1ST PAGE IS COLOUR SCHEME WANT TO TRY AND EMULATE, 2ND PAGE IS CURRENT MAP OBTAINED)

Cheers in advance guys, tried so many online tutorials already and really struggling

Does not sound like you want a hillshade.  You just want to apply Symbology classification to the elevation field under the Layer Properties.  You may need to create your own style colour ramp in order to achieve the same colour outputs.  See attached screenshot from some profile (elevation) data.
