IDW barriers problem

Trying to create an IDW with barriers, and trying to sort out the barriers, but can't find how to do the barriers, where is the barrier option?

If you use the IDW tool within the Spatial Analyst toolbox, it should include IDW with barriers. Spatial Analyst.tbx > Interpolation > IDW from ArcCatalog system toolboxes. If you just used a search, you may have pulled up the Geostatistical Analyst version of the tool, which doesn't support barriers.

Is there a way polygons can be barriers?

Yes, convert them to Polylines. IDW uses a "line of sight" approach.
