I want to create bathemerty in ARC GIS 10.1, that means every shape file there availeble x and y ordinate. now i want to input z value in my shape file, what is the procedure
assuming that you have a point file with X,Y coordinates, then simply assign a Z value in the shapefiles table and perform an appropriate interpolation from within the Spatial Analyst assuming you have it.
