Start time Device Variable Not Working Properly

Hello!
I'm working with ArcGIS QuickCapture in ArcGIS Online. I have a Date field called StartTime and it's set to record the Start Time Device Variable in the QuickCapture designer... but it isn't working. It's always recording (roughly) the same time (around 6:55PM).
In the image example, all of my line features were started and finished after 7PM, but the start time value is consistently incorrect. Might this be a bug?
I do have a field called End Time with the End Time Device Variable and that works perfectly.
Any thoughts from the Esri Community? Thanks 🙂
