It seems the tool doesn't create a centered line as expected, but a smoothed version of it.
See picture:
The polygon outlines are purple, the "centered" line is orange. As you can see, the orange line crosses the outline.
If this is the result of the centered line being smoothed by the tool, could it be possible to add an option that would bypass that softening and maintain a "true" centered line?

Please make a copy of the polygon feature class and then run the Densify tool on the copy. Then run the Polygon To Centerline tool. Does the result improve?

It does improve a bit:
For my use, it does add 3 steps to an already lengthy iterating script and it is still not centered so I think I'll go for a workaround, it'll be safer that way. That orange line cannot in any case cross a purple.
