When you run Extract Values to Points tool on the ESRI Terrain service layer, where are the output values from and how can you determine the source?

The Overview page states "The ground heights are based on multiple sources." and lists sources as "Credits (Attribution) Source: Airbus, USGS, NGA, NASA, CGIAR, NLS, OS, NMA, Geodatastyrelsen, GSA, GSI and the GIS User Community".

So if I extract values, how can I tell what the source was? You can do a definition query on the layer, but that's not a helpful solution in all cases. Is that the only solution?

This is a generalized repost from this question for more precise search term visibility.

Although not for Pro, this describes using definition queries to select a specific elevation type.

https://doc.arcgis.com/en/data-appliance/7.0/use/use-world-elevation-services.htm

This is a similar Pro version.

https://pro.arcgis.com/en/pro-app/latest/tool-reference/appendices/geoprocessing-considerations-for-...

In my reading, the docs don't answer the original question. If you aren't using a definition query, where do the values come from?
