Open Project manage Pinned directories

I'm pretty low-maintenance, but at this point it's worth the 15 minutes to google, ESRI Forum, strike out, then create this post.  How do I change the "Pinned" ( for lack of a non-Windows term) folders when opening a new project?

"Open another Project" button shows this:

 

 

 I have no idea how these got set.  I want to remove them and add new Favorites.
