Mosaic to New Raster produces striped raster

I'm mosaicing 3 rasters using the Pro 2.4 Mosaic to New Raster tool. The output displays a strange white striping (see screen shot).
If I click in the white area, I get the correct raster cell value, so it seems like this is a display issue, not a data issue.
If I then use Copy Raster, the output looks fine.
If I use Mosaic to New Raster on the same three source rasters in Desktop, the output has the same striping issue.
Any ideas?
