In ArcMap, you could load a path name as a folder connection, i.e.(P) \\pathname\subset, and from there you could access all the folders under that path name. It seems ArcPro is only letting you map to individual folders. Am I missing how to do this in Pro? I have dozens and dozens of folders, it would be a nuisance to have to map to each one.

I think you've experienced one of the many ArcGIS Pro failings. See this ArcGIS Idea.
The idea is being "Reviewed". Hopefully it will be in the product plan soon.

You are not alone. To my surprise, a couple of days ago I was struggling with that too. It was very funny. First my brain refused the information, no, it can't be true... oh yes, it's true, said the reality. I have got real difficulties trying to follow the logic path of ESRI. REALLY.
Thank you @Steve Cole for pointing out to ArcGIS idea voting. Grrrr, how much I hate that voting... I feel the whole concept is wrong. But all I can do is voting, so let's do that gdm thing.

Yup. It's installed for 2.2 so look for that in the upcoming summer release.
