LiDAR drawing using contours show no z height in scene

Hi there, I'm having an issue where I'm attempting to visualize lidar data in ArcGIS Pro as part of an assignment, and when drawing the data as points using elevation, I get a great visual of the 3D point cloud with each point having a proper z height like so:

However when I try and draw the data using contours or surfaces, they lose all vertical reading and appear flat and 2D. Like so:

This is a result I'm trying to achieve as represented in the textbook I am using (which is unfortunately outdated and is showing workflows from ArcScene not Pro:
