Just simply wishing to increase the size of data points on my map. For example I have wildlife sightings mapped across a landscape and wish to enlarge the points for visual clarity. I cant seem to see a way to do this. Thank you
Assuming you are referring to the literal point that is drawn on the map. You can click on the point as shown in your contents menu (not the point on the map). Make sure to click on the actual icon and not just near the icon or on the line containing the feature class name. That will open the Symbology pane. From the symbology pane you can adjust the size under "Appearance".

Now Im wondering is there a way to enlarge all points under a category at once. For example I have over 20 observations of different plant species shown as points, using above method it seems I have to enlarge each point one at a time? can I select all?

To update the size of many symbols from the Symbology pane select More > Format All Symbols
