How does this layer know its default symbology?

I've got this gdb line feature class that originated in GTFS data, and every map I add it to in ArcGIS Pro, it knows its symbology.

It uses symbol property connections to drive the color attribute (from a HEX code field).

Great, nice. I can do that part. What I can't find is how to get symbology to save with a feature class. At first, I thought it had to do with representations, which can be set up in ArcMap/ArcCatalog, but there is nothing listed in the properties for that layer that knows how to show itself.

Plus, ArcMap doesn't support attribute-driven symbology/symbol property connections, so I couldn't set a representation using that, nor does ArcMap listen to the preset symbology.

I'm just at a loss here. What's going on with this layer, and how can I do it in others?
