Extract by Mask changing Raster Values

I am trying to extract by mask to work for 8bit single-band images. However, once I put them through the function I get all these new classified pixels. Does anyone know what is going on? For the final product, I am doing a loop, but even when I do a normal function in the geoprocessing pane, I get the same result. The pictures are below.
