Sorry if this has been asked before—I couldn’t find anything on it, so I thought I’d check here.
Is there a way to resize all the columns in a layer's attribute table at once, like you can in Excel? Manually dragging or double-clicking each one takes a bit of time, so I was wondering if there’s a quicker method.
I feel like this would be super helpful for a lot of people!

In your attribute table, highlight the first column with a left-click and then go to the last column in the attribute table and highlight it with a left-click - this will highlight all columns in the attribute table. Once all columns are highlighted then you can double click between any of the columns (the mouse-pointer symbology will change to a left-right arrow indicator once properly placed) and all columns will be adjusted to fit the data at the same time.

You're right about not finding documentation for an answer. The solution is rather basic, but I was also unable to find any ESRI based documentation. All I could find was documentation for working with tables in layouts. Perhaps it's out there, but it isn't easy to find. Happy to help.
Using 3.4.0. Correct me if I am wrong but I think that you can highlight the first field with or without holding down the Shift key but then must hold down the Shift key and click on the outer column in the block of interest to highlight all contiguous fields between. Using the Ctrl key enables highlighting individual non contiguous fields to add them to the collection and also enables removing the highlight from a highlighted field.
