Our work flow for rematching addresses in desktop is to match against our point address locator, then rematch against our center line locator.
In ArcGIS Pro I cannot figure out how to select the center line locator for rematching. It seems to select the original (point locator) by default.
Is there a way to rematch against a locator other than the original locator?
It is not possible to rematch with a different locator than the original locator in Pro or ArcMap. I would suggest creating a composite address locator with the point locator listed first and the street locator listed second, then geocode the table and whatever is unmatched should be because an address was not matched to either the point or street locators within the composite locator. https://pro.arcgis.com/en/pro-app/help/data/geocoding/create-a-composite-locator.htm

If you are able to move to Pro 2.3, which is now available you may want to try creating a locator with the Create Locator tool, which will allow you to create a single locator that references multiple datasets. See the following help topics for additional details.
