This seems like such a fundamental request, but I can't find any other posts asking for it. Apologies if it's been asked.
In most scenarios where a layer's numeric field is symbolized by graduated colors or graduated symbols, it's the high values that are most significant, yet the default drawing order is smallest on top and largest below. Can we have a check box that allows 'Switch Order' please?
I think graduated colors & symbols has it, if you go into the dropdownlist in more-> reverse values. It could be more consistend with how it is solved for raster. It does not exist for unique values.

Hi, and thanks! Yes, I should have included 'default' in the actual message. It would be a rare situation that the lowest values are the significant ones, I should think (obviously depending on what statistic you are trying to represent). It would be good to have the reverse order as a default and reverse values for those wishing to show lowest values on top.
This idea is obsolete as this can be very easily done in ArcPro 3.7
Symbolise your layer with a graduated colour then in the symbology panel go to the advance option. Choose your field in feature drawing order that will sort features and then choose up or down.
