If I understand correctly, there isn't a way to remove a specific symbol class from the Unique Values list of symbols.
For example, if I wanted to remove the AMETHYST symbol class from the list, I don't think there's an easy way to do that.
Could functionality be added for removing specific symbol classes from the list?

Right-clicking on "AMETHYST" in the classes list and clicking "Remove" will remove it from the list and hide all "AMETHYST" locations on the map.
If you still want the locations to appear on the map, just not with a specific "AMETHYST" symbology class, click "More" in the top left corner of the classes pane and select "Show all other values." Any classes not present in the unique values list will be represented by one symbol class (usually in a generic grey shade).
Oh, Ok. Thanks. I missed the right-click functionality. I thought I'd come across a scenario where that didn't work. But I must have been mistaken.
