Currently, the chart capabilities of ArcGIS are very basic, and it does not allow to group data by categories. I think it would be a great asset to be able to create not only pivot tables, but also pivot charts directly in ArcGIS Desktop without having to export the data to MS Excel. The symbology should match the one used in the layout.

ArcGIS Pro allows you to create bar charts by summarizing categories, similar to a pivot table. More information about bar charts in ArcGIS Pro can be found here Bar chart—Charts | ArcGIS for Desktop .

When it comes to enterprise geodatabases, or possibly mobile geodatabases:

You don’t need to export data to use it in Excel. You can use real-time GIS data in Excel by setting up an ODBC connection, or a similar connection. Then you can connect to the GIS data in Excel using Microsoft Query, Power Query, or something similar.
