Please add the coordinate system information to the properties of the data in Catalog as well as the capability to Define. This is the quickest route for GIS users to access / query / define the coordinate information prior to adding data to a map - and the quickest way to identify undefined coordinate systems.

The ability to read the coordinate system quickly and easily is a basic fundamental task and going via metadata is clumsy.

Using toolbox is slow - extra clicks - when accessing this tool via the properties of the dataset should be a basic function.

Adding unknown data to a map is poor workflow.

While we have not yet provided this functionality, I would like to mention that, if you want to check the coordinates information for the spatial data item that you are adding to a map, you can see it in  the item's properties - right click the item, and click Properties in the context menu to open the item's Properties dialog.  You will be able to see the Spatial Reference information in the dialog:

In the Catalog panel, through the Shape-file properties menu, set the selected coordinate projection, as it was implemented in ArcMap.

Agreed. It should be just that easy get to such fundamental component of data and it used to be there in earlier releases. This removal sets back 20+ years of project management. I only started my GIS career with ArcView 3.3 on Windows 98 so don't know further back lol.

Sure there is the Data Management -> Projections ... -> Define Projection tool that can get to loaded or unloaded data sets but many mouse clicks vs the right click sure feels like the long way around.
