The above and below mapping option is taken to another level with the ability to combine colour and unique symbols to emphasize the values above or below a threshold in the new MapViewer.  Same functionality and mapping style to ArcGIS Pro.

ArcGIS Pro offers a number of diverging color schemes.  I see 90 when I do a quick search:

These can be applied and adjusted as needed to symbolize "above and below" some meaningful value:

Currently in Pro, the workaround is to set to unique values and apply an Arcade expression like:

when
($feature.FieldName<FieldAverageValue,1,0)

The average value in the expression can be get from show statistics if apply graduated colors or graduated symbols using this field.

E.g. my expression is:

Then you will have binary symbol pair in the grid and can change its style:

Then use the second tab on the pane "Vary symbology by attribute" to add size or color variable.

@KoryKramer I'm hoping to do something similar to what you described but with unclassed colors. Is this possible? I don't see the option to set a middle point for the diverging color schemes. 

To me this matters because when symbolizing by proportional symbols and adding additional symbology by color there is not an option for classes.
