Map Viewer - Where is my data coming from?

I am trying to figure out where my predecessors stashed all our data...

I want to be able to trace a feature layer (in Map Viewer) back to its source so I can edit the data in Pro.

I located some data the other way round (from Pro) and made changes show up in Map Viewer. Unfortunately, it appears the rest of the data isn't in the same place.

Look at the Item info for the web map in AGOL or Portal (wherever the map is being hosted) and it will list out the data layers used in the map. Each layer listed will have a hyperlink back to the REST endpoint of that hosted layer. Hopefully that will be enough to help you track down the data sources.
