Hi @CarrieORiordan, thank you for your question. The ability to add a scale bar directly within Map Viewer is not currently available, but it is a highly requested feature on our development roadmap for a future release (related idea).
In the meantime, if you need to share a map with a scale bar, I recommend using ArcGIS Instant Apps, which would offer the option to configure a scale bar.
